Louise fell in love with fermentation after moving to the Scottish Hebrides and started experimenting with kombucha as an alternative to wine. On returning to London, she continued experimenting with tea and seasonal ingredients, producing small batches in her kitchen and delivering to local restaurants for three years before launching L.A Brewery in 2017.

After making a guest appearance at the Aldeburgh Food & Drink Festival, Suffolk felt like the natural home for the first brewery. Since its conception, the business has grown considerably and is stocked in The Wine Society, Hawksmoor, Hakkasan, itsu, Nando’s, Ocado, Granger & Co, and Planet Organic.
